Snake gourd kootu
Ingredients:
- Chopped snake gourd 2 cups
- channa dal 1/4 cup
- onion 1 medium
- green chillies 3
- garlic 8 cloves
- turmeric pwd 1/2 tsp
- salt to taste
- ground coconut paste 2 tbsp
- water 1 & 1/2 cups
- coriander leaves
For the tempering:
- oil 2 tbsp
- mustard seeds 1 tsp
- urad dal 1 tsp
- fennel (sombu) 1 tsp
- curry leaves 2 springs
- hing a pinch
- red chillies 2
Directions:
- In a cooker, add channa dal & water and cook for at least 3 wistle.
- Then open it ,add the snake gourd,onion,green chillies,salt,turmeric pwd and cook for another 2 wistles.
- In a cadai, add oil,mustard seeds, urad dal, fennel,crushed garlic,curry leaves,red chillies, hing pwd.
- Then add the cooked snake gourd.Add the coconut paste and cook till the water dry.
- Then garnish with coriander leaves.
